Located on Rue de Richelieu in Paris’s 2nd arrondissement, Ryukishin is a Japanese restaurant specializing in shio ramen and artisanal ramen, inheriting the legacy of a house founded in Japan in 1998.
The first Ryukishin restaurant was established in Sakai (Osaka) by Mr. Tatsuji Matsubara, with a strong ambition: to become the leading restaurant specializing in salt-based ramen (shio ramen) and to share this unique Osaka flavor with the world.
The Paris location opened in 2018, founded by Mr. Teruo Muraguchi, with the goal of becoming Europe’s leading shio ramen restaurant and introducing a still little-known Japanese taste.
In a warm and intimate setting, our restaurant welcomes lovers of authentic ramen in Paris, Japanese cuisine enthusiasts, and curious guests seeking a refined culinary experience in the heart of central Paris.
Shio Ramen, our signature
Shio ramen literally means “salt ramen.” At Ryukishin, it is based on an exclusive salt sauce (tare) made from Guérande sea salt, mussel extracts, and Japanese kombu. This sauce is rested at low temperature to naturally develop its aromas and deep umami. The result: a clear, precise, balanced, and elegant broth — the signature of our house.
